I mix 1/2 of the yolks with finely diced onions and use a chunky blue cheese dressing instead of mayo. I dust the tops of them with cayenne instead of hungarian paprika. These have been a hit the last couple of years.

I'll eat just about anything with a good bleu cheese in it. No way I'd get away with it though.

2. Hmm, I'm not a fan of bleu cheese, but I already use Miracle Whip instead of mayo.

But the diced onions sounds like an interesting addition. Thanks for the tip!

3. I learned this one from nuns

In China, no less.

Mash the yolks with some homemade chutney, although Major Grey's works well, and minced, crisp bacon. Toss the mixture with mayonnaise, although I prefer Miracle Whip.

Top with a slight sprinkling of green onions, if you are so moved.

Smooth, slightly sweet, crunchy, delicious.
