There were 2 for dinner at my SIL's, so I asked if I could get one, the one without stuffing residue.

My husband just took a big bowl out with the bones and residue and all the grease. I had to make him put it back and made his some nice leftover mashed potatoes with gravy instead.

My apartment smells wonderful!

Hey, I made my stock today. :hi:
That carcass along with onions carrots celery and seasonings cooked quite awhile in my kitchen today. I strained out the big chunks, the itty bitty stuff at the bottom are the spices and herbs.
I am bound and determined to make the best gravy out of that! Going to follow my old gravy mindset. Bring that stock/broth to a boil. Add a slurry made of COLD stock (or water) and flour or cornstarch. And boil to consistency.
Also cooked up some wild rice.
Also reheated the turkey with just a tich of broth covered in foil in the oven, because the turkey near the bone was a little pink.
Leftover heaven! Casseroles galore! Soups DeJour! I don't know what to make first. Wild rice and turkey are naturals together.
And, because I recently learned to love this - I will mash that leftover squash and then add some sweetcorn.

Send sniffa over. I know he's jonesing for leftovers. Still have stuffing, sweet potatoes, and cranberries. I can eat this stuff every meal for several days coz when it's gone, it's gone. So I'm with him.
Enjoy your stock. That's next on my list when I get this one stripped and into containers to make more room in the fridge.

I used the stock for 2 different soups. One with chorizo and kale, and the other with ginger, lemongrass, jalapenos, and jasmine rice (both also had turkey in them). I still had leftover turkey so I made a pie with blue cheese, pears, and dried cranberries. :9
