Tuesday - What's for dinner?

We still have snow on the ground and it seemed like perfect chili weather. So I have a pot simmering away.

Were having the Chili, Beer bread (my maiden voyage - never made it before) and maybe a salad.
What's for dinner at your house?

some kind of sauce - shrimp? cheese? meatball? veggie?....

5. Tonight,
we have Tab's Baby Back Ribs, potatoes au gratin, and applesauce.

Maybe some steamed carrots, sugar snap peas, and scallions tossed with a bit of olive oil and some balsamic vinegar.

For dessert?

BROWNIES!!!!!!!!!!!!

8. Do you use white beans?
I saw a recipe a while back that used white beans and ham hocks. I think they drizzled rosemary oil over it before serving.

10. Yes, white beans
My soup will be pretty basic/old school.

I soaked the beans overnight.

I changed the water and brought to one boil and drained them. Now they are back on the stove with a change of water and simmering.

I will then remove 1/4 or so of the beans and mash the rest (not so old school - I will use a stick blender).

Meanwhile, I will saute some garlic, onions, green onions, carrots, and celery. That goes in with the beans. Let it all simmer for another 15 or 20 minutes. Season it up with some oregano and parsley.

Serve it with a drizzle of olive oil and sprinkle of fresh herbs. Maybe some parm .....

9. Leftover creamed salmon and peas on toast, coleslaw, half an avocado
(for the hell of it). But with the weather moving in on Thursday, I want to fix some potato and kale soup with turkey kielbasa. Need to pick up a second bunch of kale at Ralph's to pull it off though, and pull the kielbasa out of the fridge to thaw tonight.

Chili! I haven't had chili this year yet.

So much food.......so little time........when you live alone you only fix one or two main dishes a week, and eat lots of leftovers.

11. Wow. Ralphs? I haven thought about Ralphs since I left California.
That's a blast from the past for me. :hi: They always had the most interesting stuff. We live in a tourist area, and our local grocery store has minimal choices. I sure miss a great grocery store!

I've never had creamed salmon. Sounds interesting! Especially with the peas.

Looks like my instinct to make chili was spot on. It's snowing heavily right now.

14. I got the recipe off allrecipes.com. I added onions, sauteed them in the butter
to start. And of course frozen peas rather than canned.

In all fairness, my SO made us pork chops, potatoes and green beans for a late lunch.

The richness of the bleu patty melt was balanced by the melon and a good time was had by all!

18. a minestrone type soup and some bread
simple. minestrone type, as in the kind that you get in most restaurants, and in the can, but also in the- lets see what's in the fridge here. used some tofurky italian sausage for the vegetarians. didn't think much of it. the taste was ok, but the texture was like snot.
some nice sourdough from whole foods.
not a big deal. was out interviewing cabinet guys all day.

33. yeah, had a lot of thread over in diy
i have a 100 year old greystone in chicago. i have been working on it since i have owned it, off and on. we put a nice big kitchen in the basement, with a family room. and a few years ago, we took over the whole thing. so it is a nice big house now.
i am taking some time off from making art to invest some time and money in really getting it finished off. we were getting ready to replace the old 2 story enclosed back porch with an addition. there are some threads over there about the crash and burn of that plan. so i am trying to finish up what is left to do on the existing building.
long overdue stuff getting done. really feels good. some of that- ugly nut not really pressing- stuff has been done, painting, plaster repair, etc. got a beautiful new front door to go with the foyer that i did a couple years ago.
i'm hanging pictures today. that's a big woohoo.
pop over to diy later. i am gonna try to get some pictures uploaded tonight.

21. Pizza. I had a hair appt after work, so Mr. kcass ordered from somewhere.
Tomorrow will be a different story. Temp is dropping rapidly, and I'm in the mood for a lentil stew - my variation of this...

I use more rice and fewer lentils, and very light on the tabasco. There's kielbasa in the fridge, I've already done the prep work, and I baked bread last night.

22. Lady B (my stepmom from Louisana and an AWESOME cook) arrived today for a week
so I just made a loaf of bread, some potato soup and served it with sharp cheddar and apple slices

light but filling and tasty but fast with no work

32. I didn't make any dinner.
I came home fed the chickens and the dog. Went upstairs and put on my flannel jammies. (I didn't button the top right so I unbuttoned it and re-buttoned it. I still ran out of buttons before button holes. I left it that way.) I crawled into bed and just got up 20 minutes ago. Poor hubband had to fend for himself.
