Anyone have a good pinto bean recipe?
We bought a huge bag of dried pintos and I'm looking for recipes.
Anyone have any suggestions?

1. Easiest thing is just throw them in a crockpot with some minced garlic,

a little chopped onion, crushed red pepper, and some chopped ham or bacon. I pre-boil my beans 1 minute and let soak 1 hour (stovetop) before putting in the crockpot but I don't think you have to.

Served with cornbread, it's humble home cooking at its best.

Oh, and then there's always Pinto Bean Fudge (and yes, it's delicious).

3. It's on my desktop recipe program at home. I'll try to get it for you, but
the truth is, I got the recipe off the internet and just went for it! I put raisins and pecans in mine, so it's really a lot healthier than regular fudge. The graininess of the beans just helps get the grainy fudge texture just right.

4. I saw a few after I read your first post. If you get a chance I'd like to use yours
since we know it works, but no worries if you don't get to it!

I like a grainer fudge, so now I am really curious!

5. I've made the bean brownies
I don't remember which recipe I used but I was thinking that if I made it again I'd add chocolate chips or more sugar or something. They were a little on the bland side. Then again when I made them I used Splenda and egg substitute for the no sugar--lower fat option.... I keep expecting to find a miracle :shrug:

8. frijoles de olla
tradtional Mexican beans cooked in a pot - here's one recipe. I sometimes add some salsa or a canned chipotle, and leave out the fat, depending on what's in the house. The best part is that if you make a double batch the leftovers can be used for refried beans.

You can also make frijoles a la charra, a spicy bean broth.

And of course, chili of all kinds, from simple vegetarian bean chili to as elaborate as you like.
