Feta and spring onion hash browns Sausage and eggs Grapefruit and Tangerine Juice
I have eliminated paper towels from my kitchen so I tried my salad spinner to remove some of the water after grating the potato. Worked beautifully.

It’s cold and rainy so something with chili sounds good. I’ve also been cooking all day. Focaccia for the boys’ lunches and I’m about to make some whole wheat waffles to freeze for breakfast this week. I don’t have a recipe, so I hope they turn out. I also promised them I’d bake some chocolate chip cookies (that may have to wait until tomorrow).
That’s it! I’m making chili and cornbread. Vegetable- Spinach? Not sure yet. For lunch I’m eating ramen...waawaawaa.

Perfect cold weather choice. I've been making cornbread with maseca instead of regular cornmeal lately. It's an interesting swtich.

Just checked and I have a bag of maseca. I’ve only used it to make tortillas so far. Do you have a recipe to share? I’d love to try it out tonight.
One thing I do like about cornmeal is the texture, but I'm up to trying new things.

16. Sure. Here is the base, I chuck in green chili or jalapeno and cheese from time to time. |

Maseca Corn Bread
1/4 cup - butter - softened (plus a little extra to brush on hot skillet) 2/3 cup - sugar 2 - eggs 1 cup+ milk (I start with 1c and add a little more if needed) 1 & 1/2 cup - all purpose flour 2/3 cup - maseca 1 tab - baking powder 3/4 teaspoon - salt
Mix dry ingredients together Cream butter and sugar - Add milk and eggs Mix dry and wet together - not over mixing. Just until combines.
Preheat medium cast iron skillet in oven to 400 degrees Brush with extra butter and pour in batter Bake until puffy and golden brown Cook 22-27 minutes
This makes a lighter, cake textured, kind of corn bread with a crispy crust.

with grilled eggplant, and roasted heirloom tomatoes and red peppers from last year's garden (I freeze extra produce in September so there's good stuff to eat throughout the winter). I'll add in some Italian sausage and imported Parmigiano-Reggiano. Homemade crust and sauce, of course.

fry that chicken tonight. Probably with leftover root veggies from last night and not sure what else. I did bake two loaves of Ain5 bread with wheat and semolina flours so I have one loaf of that left for tonight, too.
I feel like doing absolutely squat. I haven't even started anything today except I just now washed last night's dishes. :eyes:

I have some pork chops that I SHOULD cook tonight, but I don't want to do that either. :D
Fried chicken sounds gooood. Other than the actual work and cleanup involved. LOL It's a lazy day 'round here.

Yeah, I'm still dragging around but now I gotta get dinner going so I can make Bill's requested cream cheese brownies and get some yogurt made so it can incubate overnight.
Whatcha thinkin' you're gonna make for dinner, then?
BTW, I just heard from Kathy T. down in Tahlequah a little while ago. She's hoping to have electricity back tomorrow!

If you haven't gotten any of Wes' chicken yet, you are missing out. Even the breasts are so juicy they almost run juices. The breasts are big enough to feed two people and I'm so stuffed now but I couldn't stop eating it. Ugh!
That's what I said about the weather but she told me they had her daughter's wedding five days into having no power and had to stay at the retreat where they were holding the wedding just so they could get ready for it.

SIL is making the ribs. He bakes them for several hours in some kind of apple base. Then grills them real quick.
I'm just doing baked beans with molasses, chili sauce, brown sugar, mustard, onion, bacon, lemon. I still gotta go buy them, need to get out of here!
I will pass the happy birthdays along! It's my hubby and 2 kids.

Food TV recipe with mushrooms and marsala and prosciuto
One of the coaches in our football program died young, leaving 3 young 'uns. We are taking turns helping out with the cooking. My turn today, made a big batch of above with pasta, also stuffed beef rolls in red sauce ( brachiole).
yesterday our friend started her chemo treatments, I cooked for her family too ( 3 kids)& will over the next few months. Chicken Tortilla soup for them
I have a rule. Always, always help out by cooking. As a guy I aint good with words and hand-holding stuff. People always remember when you cook for them.
and people are bashing kids and parents in GD :( I will lose my star soon and miss C&B group

And it's wonderful that you cook such lovely things for them rather than hit the WalMart deli counter like so many people do these days.
I recently lost a dear friend and did the same for her family. It's like the ghosts of generations of old Italian women take over my body and I cook through the grief.

It was gorgeous and delicious. I didn't have rafts of lavender so patched in with herb de Provence and it worked out very well. My guests were doing restoration on the bones of our local historical society headquarters all day and were grateful to be coddled. I enjoy doing this kind of nurturing. I enjoy your threads! :hi:

I find something that I love and tend to get stuck in a rut. There are a zillion creative cooks out there with yummy idea to experiment with. Which is part of the reason I love these threads. :) Thanks for giving me something new to try!

as a traditional prime rib dinner (baked taters and asparagus) and today the last of it got trimmed and sliced and is marinating with sweet onion and red bell pepper strips in
1/2 C olive oil 4TBSP red wine vinegar 2TBSP balsamic vinegar minced garlic small handful chopped fresh parsley (I knew I'd find a use for it) a big sprig of fresh basil salt & pepper Mrs. Dash tsp of dried mustard paprika
I'll serve it over lettuce with celery, tomato, radish, hard boiled eggs and top it off with some fresh grated Romano cheese with some 5minABread
should be tasty

I had to use up the roast chicken from last week, and when MrT smelled the broth bubbling away, any other plans went out the window. Carrots and celery and peas, big chunks of chicken and lots of lovely homemade broth - MrT is the season master... A boule from Ain5 and we're set.

I met a Frenchmen on holiday in Chinle, Az., Canyon De Chelley campground, he pulled out a whole chicken, put it in tinfoil along with sage, salt and pepper and then he put it on the table and proceeded to beat it with a rock till it was flat. He then threw it in the fire, fished it out ten minutes later and proclaimed it "Hammer Chicken". It was good though the bones had splintered up some and become a bit hazardous.
