This is a spiced version of Johnny Cakes I came up with. Cornmeal is a great vehicle for many flavors.
Giovanni Cakes.
1/2 cup cornmeal.
Salt and Pepper
Oregano
Garlic Powder
Parmesan Cheese
appox 1 Tbsp milk
Boiling water.
Olive Oil for pan.
Instructions:
Mix dry ingredients Mix in milk then add boiling water. Add enough to make a batter thicker than for cornmeal. Let sit a minute or two to allow cornmeal to absorb liquids. Spoon mixture into hot oiled skillet. Brown on both sides. You might want to press down the batter after you turn the first time. If first one needs seasoning, add to taste in the rest of the batter. I usually do a small test cake. A bit of butter can be used along with the Olive Oil.

I have been curious about Johnny cakes. I like anything related to corn in any form.
What do you then do with them? Put something on top? Like a tomato sauce? Chili?

gravies, fresh tomatoes, chutney, or honey, it doesn't matter. Usually I just make them with salt and pepper as seasoning to have with my afternoon tea. It's Polenta for those in a hurry.
