Nice find at TED talks, how to build an artisan whole wheat bread
Peter Reinhart (Crust & Crumb) tells us the chemistry and recipe to make a whole wheat bread that doesn't taste like health food: http://www.ted.com/index.php/talks/peter_reinhart_on_bread.html

It never occurred to me to make two separate mixtures the night before, but it makes a great deal of sense.
