What's for Dinner? ~ Thursday the 19th Edition

I'm thinking I'll make a BBQ sauce to use with last night's lentil loaf ~ which didn't suck! ~ and have sandwiches.

I was planning on a salad too, but grasswire's salad posting on yesterdays thread made me want a salad NOW so I'll probably have one for lunch. That leaves maybe green beans and potato salad with the BBQ lentil loaf and cheese sandwiches.

Bill will have something meaty. Maybe Chicken stirfry.

1. I just started making a turkey stock from pieces I had in the freezer.
I am thinking of throwing some vegetables in it tonight and making a basil tomato pie (one of my most favorite dishes ever).

5. Yummy.
Tomato Basil Tart


Frozen pie crust
1-1/2 lb. ripe beefsteak tomatoes
Kosher salt
1-1/2 cups freshly grated Parmigiano-Reggiano (about 3 oz.)
4 Tbs. roughly chopped pitted oil-cured black olives or Kalamata olives (optional)
12 large basil leaves, thinly sliced
Freshly ground black pepper
2 Tbs. extra-virgin olive oil

Core tomatoes and slice into 1/4 inch slices. Sprinkle with salt and arrange in a colander over a bowl. Turn every 15 minutes and allow to drain for about an hour. (This is an important step, or tart will be soggy).

Heat oven to 425.

Place the following layers in the pie pan:
1 cup cheese
1/2 of the chopped olives
1/2 of the basil
All of the tomatoes - overlapping slightly
Remaining olives
Remaining basil
Remaining cheese
Pepper
Drizzle olive oil over the top

Cook 40 minutes, turning once halfway through.
Allow to rest 30 minutes.

Doubtful you will have any leftovers, but if you do, you can rewarm them at 350 for about 10 - 15 minutes.

No, not for dinner. They always turn out tough and stringy.

I'm off my feed, I'm on my own tonight, and nothing appeals to me. Nothing.

I'm considering ordering Chinese just because I might need a grease infusion.

I have everything in the world in that kitchen, but nothing seems good.

but fried rice doesn't do it for me.

I'm in the process of cleaning the now-finished new bathroom, hoping that I'll work up an appetite.

cheap, quick & delicious. plus, no factory farmed meat which is a plus :)

13. I don't post here too often, but mind if I chime in? U.S. Senate Bean Soup.....
I bought some Navy beans the other day and searched for the recipe. I've actually had the Senate Bean Soup in the Senate Cafeteria years ago - I lived in Montgomery County, MD in the late 60's/early 70's and the schools took us on a lot of field trips to DC. One of them included a tour of the Capital and lunch in the Cafeteria.

Searching Google for the above mentioned gives several recipe variants (as one might expect) but the basic gist is this;

* 1 pound dried navy beans or great northern beans, washed and drained
* 2 medium smoked ham hocks (some recipes call for a ham steak cut into cubes and that's what I've used)
* 3 medium potatoes, cooked and mashed (Again, some recipes leave the potatoes out and call for mashing some of the beans before cooking. I have not used potatoes.)
* 2 medium onions, chopped
* 1 cup chopped celery
* 2 large cloves garlic, minced
* salt and pepper

The typical procedure given with this recipes is as follows;

"Cover beans with water and bring to a boil; boil for 2 minutes. Remove from heat, cover, and let stand for 1 hour. Drain bean liquid into a bowl; measure and add enough water or broth to make 5 quarts; pour back into beans. Bring beans to a boil, reduce heat, cover and simmer for about 2 hours, or until beans are very tender. Add ham hocks, potatoes, onions, celery and garlic, and continue to simmer for another hour. Remove ham hocks and cut up meat; return to soup. Season to taste with salt and pepper.
Makes about 2 gallons or 8 quarts. "

Here's mine;

I've made mine in a crockpot so forget about the soak/drain/measure nonsense, but depending on the size of batch you want to make, follow the above liquid/bean proportions. Cut up the veggies and toss all into the Crockpot. I used canned chicken stock instead of water. The batch that was ready to eat at lunch today was started last evening. I set the Crockpot on high till I went to bed then turned it to low. I got up this AM, stirred and left for work. When I came home for lunch (I can walk from my place to the office in 5 minutes...love it...) the Condo smelled great and the soup turned out great.

I am the kind of guy that "doctors up" just about everything, from Campbell's Tomato Soup to ...well...everything, so I added some finely chopped portabella mushrooms and green peppers.

Enjoy.

17. Grilled chicken two ways
I coated them with a mixture of 2 T olive oil and 2 T melted butter. Sprinkled some with roasted garlic Montreal seasoning and the others with a Weber blend (Lemon something for chicken and shrimp). Delish!

Rounded out with 4 cheese Rice-A-Roni (hubby loves it even if it is bad, bad, bad) and green beans.

BTW, that Weber seasoning on Shrimp on the grill is YUMMY!

19. I dont think i've ever seen a Weber lemon blend around here :(
but they don't stock a lot of different items. I used to get a Key West Seasoning blend that had lemon in it which I loved on grilled chicken, with just a tough of seasme oil at the end of the grill time.

22. You don't want to know!
I had to go to the periodontist this afternoon. It wasn't so bad. She's a great doc and it went well. I do take care of my teeth but dna has a say in all this, I guess.

Anyhow, hubby asked if I wanted something and I asked him to go get me mashed potatoes and some mac 'n cheese from Kentucky Fried. He brought home chicken, too, and I loved it. I know - KFC Ewwww! But I was so happy to have a thigh, taters w/gravy plus the mac 'n cheese.

It was a salty extravaganza. We'll be back to home cooking tomorrow. I'm not even hurting.

25. I like their biscuits a LOT. I shall not judge!
We occasionally do KFC since my fried chicken skills still...what's the word?....oh, yeah, SUCK.
I am getting better at it though!

I can gobble down their biscuits and one extra crispy breast then I'm over it. But it IS good.

I'm glad your doc trip went so well! It takes me forever to find a doctor I click with that also has skill. Sounds like you've got a good one!

26. Don't tell anyone, but I still love their Tacos. Can't get them here and
I have NO IDEA whats actually in them, but it's a taste I love. I worked at JiB briefly right after high school and got addicted to the tacos. They still taste the same.

30. black beans and red beans....
....cooked with the Trinity and some diced tomatoes and Zatarain's Creole Seasoning, and some steamed rice. Alongside, a slaw made with green and red cabbage and sliced apple (dressing red wine vinegar, olive oil, and a shake of Lawry's -- our favorite for cabbage salads).

I couldn't eat it because of the carbs. I had a microwaved bowl of mixed frozen vegetables with cheese melted on top. Bah!

so I was late getting home. Was going to fix left over nachos but remembered in the coop order, I had bought Bill some vegan tamales to try out. He liked them alot.
