Eating a delish lunch salad

So, for my main meal these days, I'm eating a salad topped with baked chicken tenders (no breading) lightly seasoned and cooked on olive oil.

The salad consists of:

Herb & greens mix (usual herbs are cilantro dill and/or parsely)
cucumbers
Cherry tomatoes
white onion rings.

It didn't have quite enough zing to satisfy, so I popped the cherry tomatoes and onions in with the chicken to roast a little. Top the greens with the chicken tenders tomatotes, and onion slices.

Top the whole thing off with olive oil vinagrette and parmesean spiced almond slivers.

1. Sounds lovely - this is the kind of stuff I could eat for breakfast, lunch, and dinner - you've got
the zing going on, the pop & juice thing going on, the cilantro, the crunch, the density - basically, it's all there - all the stuff I love about eating. And now for another fresh squeezed screwdriver before I enjoy the sunset while I make dinner for the family. Thanks for your lunch - I love eating vicariously.
