Easy and DELICIOUS slow cooker meal

My friend made this last night and it was AWESOME! I had 4 helpings (maybe why I didn't sleep so well last evening??)

Lauren's Crock Pot Pork Roast

2-3 lbs. pork tenderloin (or loin)
3 c. apple juice or cider
3 granny smith or golden delicious apples, remove core and seeds, leave skin on, cut into 8ths.
1 c. fresh cranberries
3/4 tsp. salt
1/2 tsp. pepper

Brown salted and peppered pork in saute pan, in couple tbps. of apple cider. Put seared loin in slow cooker, take some of the apple juice and loosen drippings in pan (yummy!) Toss rest of ingredients in slow cooker, apple juice to cover roast, cook on low for 6-7 hrs.

Prepare your taste buds for a feast! She served with sweet potatoes in jackets, and broccoli. MMMMMMMmmmmmmmm.

5. I'm absolutely addicted to
Robin Robertson's Fresh from the Vegetarian Slow-Cooker. It has all sorts of wonderful, filling, healthy recipes. As soon as I bought that book, I started using my slow-cooker all the time.

6. I'm making this today - I'll let you know how it turns out.
My son was salivating at the recipe. It's been in the crockpot for about 4 hours now and is beginning to smell pretty good :).

9. The pork was really tender but a little bland
for my family. The apples and cranberries made a great applesauce topping. We added a little cinnamon to the apple sauce.

8. Making is again tonight for my daughter
starving college student that she is ;)

We're going to try it with pork chops. And my friend says she has a recipe for slow cooker Carolina BBQ (pull apart kind)

Where's my fork??
