Any good ideas on fixing cornish hens?

1. I bake them
You can make a wild rice stuffing to go inside. I like plain baked after salt, pepper, and garlic powder have been applied inside and out. 350 for about 45 minutes to an hour .

2. I used to have the most wonderful recipe for them...
Years ago Crabtree and Evelyn came out with their own cookbook, using many of their own products.

One of the recipes was Cornish Hens with Honey Ginger Sauce. It was DELICIOUS!

But then of course, several years ago they discontinued the sauce (and half the other products called for in the cookbook), rendering the book virtually virtually useless.

I contacted the company to find out if they still had the recipe (at least the ingredients) in a file somewhere. No one knew anything about it.

It probably wouldn't be that difficult to make: honey, ginger, probably some salt and pepper...I'm not sure what else. You just baste the hens with it and bake them.

I can try to look up the prep if you're interested.

3. Easy
Melt 1/3 stick of butter in a sauce pan and add about 1/2 cup apricot jam heat through until blended. Turn off

Preheat oven to 325 and make a box of wild rice/rice blend such as Uncle Bens. Add some raisins.

Stuff washed birds with rice mixture. Brush on apricot glaze and cook until birds are done, about an hour (they will be golden brown and the leg will be moveable.)

4. Bacon...
One way to keep the cornish hens moist is to put a couple slices of bacon on top of them before you put them in the oven, and it adds a little bit of extra flavor, too.
