:hi: Bought a couple bunches of bananas at Costco in order to make dehydrated banana chips. They were green when I bought them, so I figured I'd have a few days leeway...and of course, time got away from me. They were awfully spotty by the time I was able to get to them; almost at the 'perfect for bread' stage.
I sliced them about 3/8", dunked them quickly in a lemon juice and water solution (to keep them from going all brown and icky) and dehydrated them. After two days, they still aren't CRISP. They're chewy, and banana-y...should I just give these to the critters, or can they be safely stored in the fridge and used as human munchies?
I'm worried about them getting moldy is the thing...

Some times the fruit is just too wet to dehydrate to complete dryness. You can try another 24 hour cycle or eat them quickly. Trader Joes sells a moist "dryed" banana but it's probably treated with preservatives.
You also can just chop them up and throw them in some muffins or quick bread. That would keep in your freezer for a while.
