Need food ideas for a Concert Tailgate
Going to see Chris Isaak this weekend with my wife and two other couples.

Not going to grill there, but make food ahead of time.

Any cool ideas?

....I made the following menu, all at room temperature after the gazpacho:

Mugs of gazpacho

Sliced rare filet mignon that had been broiled with rosemary, garlic, EVOO.

Baby roasted redskin potatoes with a sour cream dilly dip.

A loaf of lovely Italian bread

Individual red bell peppers stuffed with a corn, red onion, tomato and basil salad

A bowl of beautiful ripe seasonal fruit

Several soft cheeses

Dark cocoa shortbread

Thermos of coffee

Wine as you wish

It was well received. Don't forget the power of cloth napkins and tablecloth to make memories. Vintage, preferably.

3. here's a great recipe that travels well:
Make a tart shell

1 and 1/2 c. flour, pinch of salt, stick of unsalted butter. whir flour and salt in food processor, add cut up butter, whir until mixture is crumbly, add a few tablespoons of ice water through feed tube until dough forms a ball. roll out and place in 11 inch tart pan with removable sides. prick bottom. freeze for 30 minutes. cover tart with foil, weigh with dried beans or pie weights. bake for 15 minutes at 400. remove weights and foil and reduce heat to 350. bake another 15 to 20 minutes.

Mix 8 ounces cream cheese with three tbsp sour cream. Add capers, fresh dill and grated lemon rind. fill cooled shell. (keep bottom and rim together for easier travel) on top on filling place 8 ounces of good smoked salmon. sprinkle with more chopped dill and freshly ground pepper.
