Anyone here own a La Caja China?
Besides me, I mean, cuz Santa just sent it to me via the UPS man!

Am verrry eager to use it, but of course I don't have 50 friends I can scare up very quickly, so what on earth can I do with this fun thing? A turkey? A ham?

www.lacahachina.com for those of you who haven't been introduced to this marvel (I met it on the food network, and then the Wash Post did an article on it too).

1. Go for the ham
you will have plenty of left overs for sandwiches, soups, salads & omelets.

I am curious to find out how well you like it. I have been eyeing those too but I just bought a new smoker last year so I can't get one.

3. I've got a whole shoulder I can try (picnic plus butt) from a hog that
some guy up the street from my GF slaughtered. I bought a bunch of belly meat to make bacon (it was fantastic!). Wanted a butt, but he gave me the whole shoulder and it's been sitting in the freezer with me wondering what the heck to do with it (you shoulda' seen the butcher job I had to do on the belly meat, yeesh!) and my GF is complaining cuz it's taking up alot of room and some guys want to give her some deer meat and whatnot, so....I think I'll bring it home with me this weekend and hopefully it will thaw pretty slowly and I can get it into that magical box and we'll see what's what.

What kind of smoker do you have? I've got the WSM (weber smokey mountain) bullet (vertical water smoker).

5. I bet that butt will be delicious smoked
I bought the same smoker you have. I love the bullet style, it takes up little space on my patio.

I had an older, offset Brinkmann smoker that was larger. I seldom used it because it took up so much patio space. I kept it in the shed. It got to be a hassle dragging it out so I gave it away & bought the Weber.

8. THAT's the place to go for all your WSM recipes, questions, trivia
It's a really friendly and helpful site with sooooo many great tips on how to get the most out of yer WSM.

I've smoked butts and briskets and ribs, and homemade bacon, and one salmon, but so far no poultry or ham.

I was originally planning to do that shoulder on the WSM (I think I'd have to cut it into a butt and picnic, tho, as it's large) but now that the chinese box is here, I think that's what I'm going to try.

If I can just figure out how long it will take, that'd be perfect.
