BACON COOKIES!!!
OK, I'm not ready to give up on the chocolate chips but I'd make these. Though I'd be sure to use the real BACON!


Bacon, Cereal, and Orange Juice Breakfast Cookies

- makes 12 big cookies -
Adapted from Cookies by Natalie Hartanov Haughton
Ingredients

1/2 cup butter, room temperature
1/2 cup brown sugar
1 egg
2 tablespoons thawed frozen orange juice concentrate
1 tablespoon grated orange peel
1 1/4 cups flour
1 teaspoon baking powder
6 strips bacon or veggie bacon, cooked very crisp, drained and crumbled (I used veggie bacon and it worked just fine)
1/2 cup Grape-Nuts
Procedure

1. Preheat oven to 350°F.

2. In a medium bowl, beat together butter, sugar, egg, orange juice concentrate and peel, until light and fluffy. Add flour and baking powder, beating until well blended.

3. Stir in bacon and cereal, stirring only until incorporated.

4. Using an ice cream scoop (I used a big one), drop 3 inches apart on ungreased baking sheets.

5. Bake for 10 to 15 minutes or until edges are golden. Remove cookies from sheets while still warm and cool on racks.

It was much better in concept than in execution. Meh.

These cookies might be good but someone will have to try them and let me know before I devote the time/energy to making them myself.

7. While I confess a certain fascination
along with the sensation of smoky grease caught in the back of my throat on reading this one, I wonder if bacon scones might actually be good.

16. When I have bacon I must use...

no soup to make, no salad topping needed, no other plans...

I always make Sweet Bacon.

Mr. Tesha found this several years ago,
~ slow oven, brown sugar and maple syrup
~ precook the bacon a little to release some of the fat. I use the microwave and paper towels.
~ layer in a casserole dish and bake until they begin to darken and look well done
~ let them cool a little and nobody but nobody can walk by them.

9. We have a new "gourmet" donut joint near me
I confess to trying the Bacon Maple Bars. They were really, really good! I think I would really like these bacon cookies and it's taking every smidge of self control not to make them. I don't have grape nuts or OJ concentrate in the house otherwise they'd be in the oven already.

And I can imagine a shortbread with bacon bits, with very little sugar and maybe cream cheese. That might be good.

But, I think I'll pass on this one. OJ and veggie bacon.... nah.

11. I had one major craving when I was pregnant
I craved Sarah Lee Pound Cake sliced thin with crunchy peanut butter and bananas layered between two slices. I'd put it in a bowl and pour Orange Juice over it. I had a major relationship going with this creation...in fact I'm still wearing it on my ass. I think the OJ/Bacon combo sounds really good. I could even see this with Banana Peanut Butter cookies in tribute to Elvis.

I just know I won't rest until I try these.

I have entered carb overload....

I got Thirteen really large cookies from this batch. I'm working on my second one while they are still warm. They are FRICKEN delicious. Orangy and crunchy and soft and chewie all at the same time. Strong Butter undertones with a hit of yummy salty bacon in every bite. If you like the sweet and salty thing...This one is a keeper.

Out of curiosity, did you use pulp-free OJ or the type with pulp (or extra pulp)?

I used extra pulpy because it sounded like the better way to go. I hope you try them and let me know what you think

Cool. Whenever I get orange juice, I get the extra pulpy. It might be a while before I actually try it out but I'm definitely curious enough. So, when it happens, I'll let you know what I think of them.

Somehow, I don't feel moved to try these, but your enthusiasm is fun. I've tried to ignore this thread for a while, but ever since it started, I've been seeing grotesque bacon recipes on foodgawker (which is all about the photography) and thinking of you. Maybe next week you should try some dark chocolate bacon cupcakes? :)

You did get me back with the truffles, though. Luckily, I was just shopping and came home with a Ghirardelli 85% cacao chocolate bar. . . one square about did me in and though it's been about two hours since, seems to have rendered me immune to your bad linkage. Phew! I've got a pumpkin to turn into pie and the last thing I need to do is make truffles I don't need. :D

When I have pancakes with maple syrup, the bacon always ends up with syrup on it and it's fine.

And pigs in a blanket, those are eaten with maple syrup too.

So sure, why not?

(except I'd want to heat them up before I ate 'em. Unless the bacon is rendered really really well)

24. Just tried these
I made a batch last night. I used unsalted butter and probably added a bit much in way of orange peel. I can definitely say they're actually pretty good. The first bite or two is a bit strange (not unpleasant, just a bit odd) but after you get over the initial strangeness, you can appreciate the taste. I took some to work and managed to get five different coworkers to try it. All liked them (ranging from "not bad" to really liking them). Thanks for the recipe. I'm probably going to make a second batch in the next few days and see how many more people at work I can get to try them.

25. We're liking them too....I'm actually going to make a deviation
My daughter is a sausage fiend and has requested I try making these with sausage crumbles and apples. I'm going to use apple juice concentrate and cinnamon and probably will add either dried apples or finely minced apple with the sausage (extremely well drained)

26. Variations...
Hmmm... Sausage and apple sounds interesting. You'll have to mention how they turn out. For whatever reason, that got me thinking that sausage and cranberry might be an interesting combination as well. I've seen (but not tried) some sausages made with cranberries so I wonder if that would work. It's probably riskier, as the tartness might not mesh well with the sweet and salty.
