Impromtu quinoa lunch

Impromtu quinoa lunch
I'm really scrimping these days so I'm using up my pantry.

Looking for something good for lunch here's what I had today:

2 vine-ripe tomatoes
pine nuts
1 C quinoa
1/2 a large white onion
olive oil

Here's what I did with them:

I diced up the onion and let it sautee in the olive oil at the bottom of my saucepan. When the onions started to sweat out, I diced up the tomatos and threw them in there. Then I added the pine nuts. I let everything cook down and start to brown a little. Then I added the quinoa. My thinking was people toast nutsand even rice before the water to add flavor, why not quinoa too? So I let the whole mess cook a little to produce fond on the pan bottom.

Then I added the water to cook the quinoa. Cooking quinoa is so simple. 2 C water: 1 C quinoa. Let it come to a boil, then turn it down to simmer for about 15 minutes.

I put it in a bowl and added a little spaghettie sauce. :9 :9 :9 :9

Really satisfying and very, very rich nutty flavor.

The only thing I'd do differently next time is put the pine nuts in with the onions at first. No need to add after the liquidy tomatoes. I think some cheese might be good too, on top. And other nuts would work well too.
