They look a lot like Cortland apples. Those are firm, tart apples that hold their shape in a pie. I do like to mix them 2:1 with a sweeter, more flavorful variety that cooks into mush. The combination has both flavor and texture.
Cortlands were the go to apple back in New England for all baking purposes: whole, stuffed, in stuffing, in pies, in tarts, everything.

Cortlands are my best guess for the three in the last picture. Ripening time is right--mid to late September, and they are a close match to descriptions I've read: white, crisp flesh that doesn't turn brown quickly, and a large, flat dull apple (until you shine them up).

I'm sure there are people there who could identify the varieties by the photos.
Because the trees are probably no more than nineteen years old, that would help narrow things somewhat.

apples ripen later, in October. The two in question ripened in September: one fairly early in the month and the other by the middle of Sept. Thanks for posting the site; I had already seen that one though.
