Made turkey enchiladas with leftovers - thanks grasswire
I used this recipe for ingredients http://allrecipes.com/Recipe/Turkey-Enchiladas/Detail.aspx

But I only warmed the tortillas to pliable on a griddle and then filled them. No oil. The enchilada sauce went on last. I overfilled them and just snugged them in the pan since the cheese melts and holds everything together. Sour cream on top.

This is going to be one of the things I make with leftover turkey since we make turkey often. Enchilada sauce zips up the turkey just right.

I don't use oil for enchiladas anymore either. I don't even roll them up most of the time. I just stack the stuff in several piles. I guess technically that isn't an enchilada. Maybe it's called a pastel? I'm too lazy to look it up right now.

Sometimes I grate a zucchini into the filling for a little extra veggie bonus.

2. Yeah, I pretty much folded them over and it came out great
We had them again tonight. I only made a dozen since that's the size package of corn tortillas hubby brought home from the store. Tonight he said that it's like Italian food - even better the next day. I had a package of Uncle Ben's Spanish rice that you nuke for 90 seconds to have on the side.

I can see keeping a package of the tortillas in the freezer as an emergency stash and take them out when I have leftovers to use up. Your zucchini or any leftover veggies would be fine. After all, what doesn't go with cheese? :D
