Butterfly chicken
I watched a number of videos online and then tried it out today. It wasn't hard. I cut out the backbone with some good kitchen scissors and then removed the rest of the rib bones. Last was to remove the breast bone. I never even cursed once. :D

I wanted to get the hang of this before also removing the wing, drumstick and thigh bones. But it shouldn't take long. There are several good videos demonstrating how to debone a whole chicken.

I baked the chicken skin side up with fresh tarragon and lemon slices under the skin and lemon rounds on top. Black pepper and dried onion flakes sprinkled on top.

I don't know why I haven't learned to do this before. It'll be a kick to put a whole deboned chicken on a platter and cut it into slices.
