Anyone have a favorite banana recipe to share?
I ordered a few bananas from the store and got a few large BUNCHES of bananas :silly: instead. Banana bread is always a favorite, but I still would have an abundance.

My old Betty Crocker book has a few ideas that I've never tried, like banana oatmeal cookies that I will try, but wondered if anyone had a favorite to share. Thanks :-)

1. Banana milk shakes
are one of my favorites. Mom used to make them for us when we were little. :9

2. I had the same problem last week and made some banana oatmeal muffins
that were delicious. I added some raisins to the batter,used King Arthur White Whole Wheat flour and added a little cinnamon and nutmeg, otherwise followed the recipe exactly.

9. Sounds wonderful!
Banana Oat Muffins

Recipe #8845 | 35 min | 10 min prep | add private note

* 1 1/4 cups Robin Hood oats or Old mill oats
* 1 cup all-purpose flour
* 2/3 cup granulated sugar
* 1 1/2 teaspoons baking powder
* 1 teaspoon baking soda
* 1/4 teaspoon salt
* 1 large egg
* 2 cups ripe bananas, mashed (4-6 bananas)
* 1/3 cup butter, melted
* 1/2 cup chopped nuts (optional)

Directions

1. Combine first 6 dry ingredients in large bowl.
2. Mix well.
3. Beat egg, banana and melted butter together in small bowl until smooth.4.
4. Add banana mixture to dry ingredients.
5. Stir just until moistened.
6. Stir in nuts, if desired.
7. Fill greased muffin cups almost full.

Bake at 375°F for 20-25 minutes, or until top springs back when lightly touched.

3. Bananas Foster
Melt a bunch of butter in a frying pan. Add a bunch of brown sugar and melt into a thin syrup. Add bananas, sliced lengthwise.

Cook slowly, spooning delicious syrup over bananas while they cook.

When bananas are warmed through and soft, but before they are mushy, pour some brandy, or whiskey, or rum on top (turn off burner first).

Light on fire! Make sure that people see this step. Swirl around until fire goes out.

Serve immediately, preferably with vanilla ice cream, though whipped cream will do in a pinch.

Absolute heaven, easy to make and sure to impress any guests!

10. That sounds absolutely divine and decadent.
(I wouldn't trust my clumsy self with a flame in the house.)

Do you think adding a bit of Amaretto after it's off the stove would be just as good? And maybe slivered almonds to boot? Dang, that sounds good to me!

I have so many bananas, I can try lots of ideas. Thanks a "bunch" ;-)

4. Make a Banana Upside Down Cake
Just use a Pineapple upside down cake recipe and substitute with the sliced bananas. Firm ones work best.

If you are really ambitious you can make some white chocolate and banana raviolis for dessert. You can use won ton wrappers and stuff then with bananas and some small bits of white chocolate. Make sure they have a good seal and drop them in the fryer for a minute.

Banana trifle is quick and easy too. Just layer some bananas with cake, whipped cream and vanilla pudding.

And don't forget the banana, peanut butter sandwich! (with or without bacon). You can kick it up and give it an egg wash dip it in graham cracker crumbs and cook as the best stuffed french toast ever.

Of course, I probably never heard of any good peanut butter sandwiches because growing up in my house - peanut better was considered junk food and my Mom rarely bought it. It came separated in the jar with the oil just sitting there on top and it was a deal just mixing the oil into the peanut mixture on the bottom.

I would guess that's considered a very good wholesome peanut butter today. :-)

Glenn’s Banana Bread with Chocolate Chips and Candied Ginger

1 cup granulated sugar (for vegan version, use raw sugar)
1 large egg (or 1 ½ tsp Ener-G Egg Replacer plus 2 Tbs warm water, says Glenn)
½ cup (1 stick) unsalted butter (or ½ c non-hydrogenated margarine), at room temperature
2 ripe medium-size bananas
3 Tbs milk (or soy milk)
2 cup unbleached all-purpose flour
1 tsp baking powder
½ tsp baking soda
1 cup chocolate chips
Small chunks of candied ginger, to taste
½ cup chopped walnuts, optional

Preheat oven to 350 degrees Fahrenheit. Grease a 9- by 5-inch loaf pan with butter or cooking spray, and set aside.

In a large mixing bowl, cream sugar, egg, and butter.
In a separate bowl, mash bananas; then mix with milk.
In another separate bowl, sift together flour, baking powder, and baking soda. Add flour mixture to butter mixture in three parts, alternating with banana-milk mixture in two parts, stirring by hand until just combined. Stir in chocolate chips, ginger, and optional nuts.

Turn batter into loaf pan, smoothing top with the back of a spoon, and bake for one hour, or until a toothpick inserted in the center comes out clean. Allow to cool for a few minutes; then remove bread from pan and cool on a wire rack.

I am not a pie person so much, but a graham cracker pie crust sounds great with a Banana Cream Pie, don't you think?

7. you can cram 3 or 4 bananas into a small 9 inch cream pie

in a small mixing bowl, whisk 2 eggs or 3 egg yolks until uniform

in a med sauce pan mix 1/4 teaspoon salt, 3/4 cup sugar with 3 tablespoons of cornstarch, add 2 cups of cold milk then heat on med until bubbling - stir and cook for 2 minutes

pour some of the hot mix into the eggs, mix and immediately return egg mixture to hot pan - cook another 2 minutes stirring constantly

remove from heat and add 2 tablespoons butter and 1 teaspoon vanilla

stir in 4 or 4 bananas sliced into 1/4 to 1/2 inch thick circles, pour into baked pie shell

top with meringue (find instructions on line - I only like it on lemon pie) and chill

or whipped cream - decorate with more banana slices before serving!


edit to add the cheat way: store bought crust and jello vanilla pudding!

Here's a good place for drying fruits using an oven: http://www.ext.colostate.edu/pubs/foodnut/09309.html

You can store the dried fruits for up to a year. I use dehydrated bananas in cereal, baked goods, or eat them straight up like candy. They are kind of chewy and leathery, not like the dried banana chips one finds at the grocery store. I think those may actually be plantains.

Frozen bananas are good for about 3 months or so. Peel and store/freeze in ziplock bags. They'll turn brown, so you'll probably only want to use them for baking, or maybe smoothies.

16. Glad you asked. Years ago we went to a tiny Chinese restaurant in
Arlington, VA. called Mrs.Chens. We had as a final course, a lightly coated fried banana. They were coated with something(Rice Flour?) and deep fried for a few seconds then covered with powdered sugar. They were the best dessert I ever had. Since I'm not a real dessert eater, I suppose that is crazy but but were they so good. I have no idea how they were made. They were about the size of big meatballs. Sweet, crunchy outside. Just the best. Anyone know how to make them?
