2. Skinny chefs are just not tasting their food
and I don't care what they say about it.

If that chef is chunky, I know s/he has tasted what's going out of the kitchen.

That doesn't guarantee it'll be good, the chef might be a heavy smoker with a lousy palate, but it improves the odds.

3. I rarely eat or even taste what I cook.
Eating would be like a busman's holiday.

(And, yes, it has occurred to me that it's risky to serve up dishes you haven't tasted. Go figure.)

6. Spending 14 hours / day on your feet tends to help
Plus, access to primo-quality fruits and veggies. I was never in better shape than when I was working in restaurant kitchens.

8. Me too. Restaurant work is like hot yoga + marathon running + free weights.
Unfortunately, the skinny was temporary and the leg damage is permanent. :(

7. 'Cause they're running their ass around the kitchen

Working a kitchen ain't easy. If they're a hands-on chef, they're getting more than enough exercise. It's not like they're sitting around eating souffles and getting fat.

9. Besides the long day work loads
many people working in the food industry experience lack of appetite due to the smells they are around all day.
Apparently when we smell food our digestive system kicks in tricking the body into thinking it has been fed. Even when food workers eat their system is on fast forward.
My son is a chef and this was the reason given to him by a dietitian for his lack of weight.
