We're having a weird dinner tonight.
I was roasting a rooster (not the one we harvested) and put on some little tiny red potatoes to boil and made some cole slaw. For some odd reason I started messing with the chicken. I took it out of the oven when it was a little over half done and cut it into pieces. I started throwing a sauce together and now it's simmering in the cast iron skillet with soy sauce, rice vinegar, a little bit fresh pineapple that was left in the fridge, fresh orange juice, fresh lemon juice, brown sugar, wee bit of honey, cilantro, minced fresh garlic, and clementine segments.

2. LOL! Good idea!
The chicken was really awesome! Tasted great and I'll definitely make it that way again. I think I was just afraid that since it was a rooster it would be kind of tough and stringy. Came out nice and tender. We finished it all except one leg and a wing. Not much breast to speak of but definitely good stuff.

It was just the sides that didn't seem to be what one would normally serve with it but I threw some butter and garlic in the potatoes and we ate it all anyway.

5. After I threw all of that
in with the chicken pieces, I was thinking that rice would have been a better accompaniment and maybe some broccoli with those flavors. But hubband was hungry so we just went with it. LOL

It didn't look as attractive as you would think since it all simmered together for about 20 minutes and took on that soy sauce look. LOL But it definitely was delicious. Very tropical as eleny eluded to with her little umbrellas. :hi:
