Made a simple and tasty old fave today: Harvard beets! |

Steamed beets, peeled and sliced, set aside. Sauce of cider vinegar, minced onion, sugar, salt, cornstarch.
Yuuuuuummmmmmmm.

They were a side dish for a New England Boiled dinner. The recipes were in a country magazine. It was the first time I ever had hot beets that weren't in soup. I remember baking them in their skins first and they were delicious.
It's so nice to meet other people who appreciate beets!

I came to beets, and other root vegetables very late, but thanx to supernova who posted a wonderful recipe here. I love them all except maybe the parsnips. :hi:

I love Harvard Beets, but there are no onions in the traditional recipe. Might be interesting, though.
