I broiled pork chops last night and had 2 1/2 chops left over. So I put them in the crockpot with 1/2 a bag of sauerkraut, 2 bay leaves and black peppercorns. Then I found mushrooms in the fridge and added them along with dried onion flakes. Tomorrow I'll pick up a couple white potatoes to boil and chill to have on the side.
I also had leftover bone-in lamb roast that I'd frozen. So I pressure cooked that in water with a couple of bay leaves until the meat fell off the bone. Tossed the bone out and added beef flavored Better Than Bouillon plus 2 cans of shoe string beets.
Definitely reached back into my heritage today for these two dishes.

I love a long and slow roasted leg of pork with roasted potatoes in the drippings and kraut poured on top for the last little while and cooked until it's a little crispy. If you catch it right you get that crunchy skin with the melty fat and sour little shreds of kraut. Yummers.

...is like having a "left over" Cadillac to me.
One thing I love to make with lamb is Indian Saag. Cube the lamb, and cook slow & long with lots of chopped spinach, minced onion, curry powder, garlic and coconut milk. Served over Basmati. With mango chutney.
