Another wonderful Fanny Farmer cake recipe. |

I thought I had found this recipe on the internet last week, but it was missing a few items and when I made it last week, it didn't come out right. That was the cake I cut up and added to my chicken and stuffing casserole.
This is actually the correct recipe that has been tweaked by a friend of mine with regard to the spices. I also added chunks of fresh green apple with the skin still on.
This, however, is every bit as good as the Fanny Farmer Fresh Banana Cake we all tried last year. Both cakes are too fabulous for frosting, wonderful just as they are. I just sprinkled the top of this one with a little turbinado sugar.
Applesauce Spice Cake
Ingredients: 1/4 lb. butter 1 cup brown sugar 1 cup applesauce 2 eggs 2 cups flour 1 ½ teaspoons baking soda ½ teaspoon salt
2 teaspoons cinnamon
1 teaspoon cloves
½ teaspoon nutmeg
1 teaspoon ginger
½ teaspoon cayenne
optional: ½ cup golden raisins ½ cup chopped nuts of choice
Directions:
Preheat oven to 350 degrees F. Butter and lightly flour one 9x13-inch cake pan. Cream the butter, add the sugar gradually, and beat well. Add the applesauce and blend. Beat in the eggs and mix thoroughly. Mix together the flour, baking soda, salt, and spices, add to the first mixture, and beat just until mixed. Stir in the raisins and nuts. Spread in the pan, sprinkle the top with a little cinnamon sugar, and bake 35-40 minutes, or until done. Test to see if a toothpick comes out clean.

I just made an oatmeal spice cake last week and Mr. Pup's office mates gobbled it up in record time. Yours looks scrumptious, hippiewife, and it uses less butter. I'll try this one next time. :hi:

I just got home from work and ate some of it. It's even better today than when it was hot, and you don't get as huge a kick outta the cayenne now that it's cold. But the cayenne does really give the other spices a really nice boost.

recipe but it really does add some zing. This reminded me of gingersnaps! I confess I did not use the raisins or nuts (too lazy to shell) plus I wanted to see how it tasted without. It's delicious! I wonder if I can make miniature cupcakes with these? I only put the cinnamon sugar on top and I think I could have added more but it doesn't need any icing otherwise. Mmmmmm...thanks for posting this.

Bill doesn't care for having the cayenne in it but I love it! I do love it with the apple chunks, too. You get that tart sweet of the fruit next to the cayenne and it's really tasty.
I don't see why you couldn't make cupcakes with it and just reduce the baking time.
