They serve this as a desert at a local Thai restaurant. It's very tasty. Yesterday I noticed some good looking mangoes at the supermarket, so I figured I'd give it a try.
It's really easy to make, and tastes great (if you have a good mango, that is).
Just cook about 3/4 of a cup of short-grain white rice (I use "sushi" rice) in a can of "lite" coconut milk (this is not sweetened, but has had the thicker "cream" removed). The microwave worked well for me, but it could be cooked on the stove, or in a rice cooker, any way you normally cook rice.
Serve warm, with pieces of mango on top.

I also toast coconut flakes (unsweetened chips) as a garnish. Adding mango sounds heavenly. Thanks for sharing your recipe.
