Recipe suggestions please! Tell me what to do with the following ingredients: |

sea scallops, fresh lime (I have to use up cuz it's already cut up), 1/2 bunch of scallions, plus my usual staples of garlic, flat leaf parsley, white wine, butter, olive oil. I also have a red onion (not cut). I'd like to serve with brown rice and a salad.
Any help you can offer will be most appreciated. It's gonna be what's for dinner tonight, regardless...

... with a little garlic, then add a little parsley and lime juice. The simpler the better with scallops.

only do a quick white wine/parsley reduction in the pan to sauce the scallops. I'd use the lime juice in a salsa on the side, a tart foil for the sweet scallops.

Dry the scallops before sautéing them; you don't want them to be steamed from the outside.
Use enough heat in a heavy enough pan that the scallops brown a little on the outside before they cook too much inside and turn tough. Don't use too much oil because when the scallops are done, you'll want to remove them from the pan and...
Use your white wine to deglaze the pan. Then, go crazy and spice the remaining sauce as you like. As surreal suggests, now's the time to add your lime juice and whatever else strikes your fancy; maybe something slightly sweet?
Reduce the sauce until it's slightly thick (and if you like, drive it thicker a little bit of corn starch well-mixed in some water or more of the white wine).

Scallops In Lime Juice Ingredients 4 tablespoons honey 2 tablespoons lime juice 1 tablespoon olive or canola oil 1 pound bay or sea scallops, rinsed and patted dry 2 teaspoons grated lime peel 1 lime, cut into 4 wedges
Directions Preheat the broiler. Position the rack 4 inches from the heat source. Cover a broiler pan or cookie sheet with aluminum foil. Spray generously with cooking spray.
In a large bowl, whisk together the honey, lime juice and oil. Add the scallops and toss gently to coat with the honey mixture.
Arrange the scallops in a single layer on the prepared broiler pan or baking sheet. Broil until opaque throughout when tested with a tip of a knife, about 5 minutes. Turn the scallops over and broil for another minute.
Divide the scallops onto 4 warmed plates. Pour any juices from the broiler pan or baking sheet over the scallops. Sprinkle with grated lime peel and serve with a lime wedge.
