Cooking Schools and other dreams

If I could attend one or more cooking schools (seems like a great way to spend a vacation imo), I think I'd put Julie Sahni's Indian Cooking School in Brooklyn at the top of my list. Besides being a big fan of Indian food and complex flavors, it seems like it would provide an amazing opportunity to learn about the use of spices which are usually abundant in Indian dishes.
I'd definitely have to plan way ahead for this one, as the waiting list is
purportedly long. She also does annual culinary trips to India!
