Here is my twist. I love to add shittake mushrooms any chance I get. I soak the dried mushrooms in 1/2 cup of chicken stock and then use the remaining stock to moisten the recipe as needed. I follow the same procedure as in most of the videos shown except adding the reconstituted mushrooms as I saute the meat. I like to add the noodles to the pan and then the egg cheese mixture. Tonight I will top it off with additional cheese and diced red pepper and tomato. A white wine will compliment. Thanks for the inspiration!

Ok, alternate plan B
I diced some bacon and sauteed.Removed. Sauteed minced onion and garlic and mushroom. Plan to deglaze with white wine, add cream, parmesan, add baby peas, salt and pepper, (maybe a little nutmeg?) and toss with penne. Should still be good altho NOT carbonara.
Oh well.
