It's fresh asparagus season! (Great recipe enclosed)

Hey everybody-- I just tried a wonderful new recipe this past weekend, and now I'm addicted.

While I was laid up I didn't get to do any cooking so I finally got to make reprehensor and I a nice dinner, using lots of great recipes from my collected Weight Watchers cookbooks.

So you know this is relatively healthy as well. It is DELICIOUS!

Roasted Asparagus with Brown Butter

Arrange about 40 washed and trimmed fresh asparagus spears on a cookie sheet sprayed with non-stick spray. Season with some freshly ground sea salt and fresh ground pepper.

Place them in about a 375 or 400 oven for 3 minutes.

In a small saucepan, melt about 2 tablespoons of butter (or whatever you use- our Brummel and Brown worked fine). Let it get a little bit browned, then add 2 teasopoons of low salt soy sauce, and 1 teaspoon of balsamic vinegar.

Yum!
I've made it twice since last weekend. It's even great just with a salad for a nice lite lunch.

Roasted aspapragus is great cold in salads.

I am an olive oil addict. I've got the olive-oil Pam spray for the cookie sheet, which helps too.

3. With Pasta!
I love roasted asparagas mixed with olive oil, garlic and pasta. A good handful of shredded cheese on top is all you need for a great meal.

I love it and reports back from others who've tried have all be quite positive.......

5. Yes I did!
It looked interesting. I'm not a big balsamic vinager fan except on sweet things like strawberries and onions. My SO though loves it and since I watch carbs, and only eat Pasta about once a month, I may make it for him only one night. I'll let you know what he thinks.

7. I'm not a balsamic fan, either
But in Hubs's reduction with the brown sugar, it's a wonderfully smooth flavor. I even had to get a bottle of the vinegar since we don't keep it. Now, I think I'll be running low pretty soon. :D

6. my favorite way to eat asparagus...
...is with a bit of butter and a shower of orange zest. It's the springiest of flavors.
