Which fruit doesn't mix with jello?
I've got a can of pinapple I was going to put in the jello, but I seem to remember that pineapple won't let it set correctly, am I wrong?

1. Pineapple and papaya are the worst
because they contain enzymes that break down protein and collagen, and that means Jello.

Fresh pineapple is not good with jello, but canned works because it's cooked in the canning process. According to the Cook's Thesarus, these raw fruits should not be used: kiwi, papaya, pineapple, peaches, mango, guava and fig. Cooking destroys the enzymes, so canned fruit is fine.

We have found that 2 packets of plain gelatin, mixed with 1 packet of koolaid and Splenda to taste, makes a far better tasting non-sugar jello than Sugar-free Jello (more range of flavors, too.)

(On edit: I make jello or jello-sub with canned pineapple tidbits and grated carrots all the time. Use the long method, and it sets just fine.)

4. I;m not sure of this, but I seem to remember my mother making .....
that pineapple and carrot 'salad' with orange jello by mixing in the canning liquid from the pineapple as part of the water volume.

Does that sound right?

5. We did this
mix in the canning juices as part of the water, absolutely. Just make sure it's part of the cold water, not the hot, if you're making it the old-fashioned way.
