1. Easy peasy, better quality and tasty, too!
I bought some ground beef that's from an organic ranch. But I'm still keeping my fingers crossed. Hard to imagine life without burgers, chile or steaks.

2. I Had Been Buying Coleman's Ground
from the local organic grocer, but wasn't happy with that, even. Ground beef in general, regardless of the source, I dunno ... It seems the texture of it when cooked is different than it used to be, doesn't hold together well.

I've not tried the cuisinart method. My fear is it is too easy to overgrind and wind up with pate. :)

I use the meat grinder on my trusty ol' Kitchenaid.

All that said, the best fat/lean ratio for taste is 80/20. If you wanna check what you have, separate the fat and lean and weigh each.

The best cut for ground beef? IMHO it is chuck. I find it far more flavorful than anything else. Again IMHO, the worst is round or **gasp** sirloin.

As an aside, my very favorite steak? Chuck eye. Tender but with only small chunks of meat as this is the chuck (front) end of the prime rib and the muscle that forms the rib eye is very small here - hence the small muscles all in a group. So while it isn't an attractive steak in a classic, aesthetic sense, for my money it is far and away the most flavorful.

4. I Used a 50/50
Chuck/sirloin. Not sure how much fat content went it, but it worked. The trick with the processor is to do it in pulses.

7. I went out and bought a meat grinder
during the last mad cow fiasco. There is no way in hell I would ever buy store bought ground beef after reading the things I read last time and I love hamburgers wayyy to much to give them up. Ugh! It took me forever to find one in my neck of the woods but I finally found a Waring Pro at sears and it was the best $100 I've spent in a long time. Sometimes I bitch that it's tedious having to grind it but at least I know exactly what is in it now.

8. I've looked at that Waring Pro and was impressed.
It looks sturdy, well-designed, and very capable.

Is there a sausage tube attachment available for it?

I keep telling myself I am GOING to make sausage but alas it has not happened yet. There are just never enough hours in the day with 4 boys and 4 dogs and a part time job. :crazy:

It is a very good meat grinder, I have absolutely no complaints about it.
