Pie suggestions?
I want to make another pie for Thanksgiving beside pumpkin. I have been thinking maybe chocolate pecan or lemon meringue. Any suggestions? Any good recipes to share?

1. Caramel Apple
My friend makes these. I don't have a recipe --sorry. She tells me she just makes a regular apple pie with 1/2 the amount of sugar then pours jarred caramel sauce on top before she covers it with crust. Sounds easy.

You just can't beat it. A little cinnamon ice cream or vanilla ice cream on top is even better.

It just wouldn't be the holidays without both! My mom's pecan pie recipe includes a bit of bourbon, and is out of this world!

7. That sounds suspiciously like Kentucky Derby Pie
which your basic pecan pie w/chocolate chips and a hit of bourbon in it.

some people make it w/walnuts instead of pecans.

My mom's is just pecan pie with bourbon, though; no chocolate chips! Or maybe it's whiskey; I seem to remember her using Jack Daniels (is that bourbon or whiskey, or are they the same thing?) Now I'm confused!

I saw you mentioned buttermilk pie in another post...MMMMMMMM, my mom used to make that, too, but not in a long time! The name sounds kind of gross, though, for people who've never had it!

9. Bourbon is a type of whiskey, as is Scotch
Bourbon legally can only be produced in Kentucky.

There was a distillery in my small college town in Kentucky...I love the smell of sour mash in the morning! (actually I am not kidding..the first time you smell it, it is like...ewww. Then you sort of get used to it. Then when you come back after being away for a while, it is like "ahhh, back home again".)

Jack Daniels Tennessee Sipping Whiskey is made in Tennessee, in a dry county LOL!!!!!!!

11. I had no idea; learn something new everyday!
I guess the Bourbon thing is kind of like Champagne; I learned that the sparkling wine known as champagne is not supposed to be called "champagne" unless the grapes are grown in the Champagne region of France. I don't know how some of these companies get away with calling their wine "California Champagne". Anyway, the inexpensive "champagnes" like Cooks and Brut taste like crap! So now anytime someone I know needs to buy "champagne" I tell them the story, and recommend that they buy Asti Spumanti instead!

Speaking of smells, you know over here on South I35, where the Miller Brewery and the Mrs. Baird's Bakery are? Sometimes when I drive through there I smell yeast, and I always wonder if I'm smelling bread or beer!

the bread smell will be constant, but the beer smell may only occur every other day or so.

I used to LOVE driving by the Mrs Bairds up on 30 just past downtown, which was sacrificed to the new freeway!

OH Central Market has Key West Pink Shrimp for $5.99 a pound this week. Frozen, they pack it in ice for you.

Do you ever shop at Central Market?

15. Yes, I miss the old Mrs. Baird's...
I remember that smell even as a young child! For some reason, the one on 35 either doesn't put out as much smell, or it's not as close to the freeway or something.

I rarely shop at Central Market. There have been a few times that I needed something unusual and went there to find it. Like there's this raspberry chipotle sauce that you pour over cream cheese and use as a dip with crackers (Mmmm...it is SO good!). I love the store, but it's just not very convenient for me. I mostly order my groceries on line from Albertson's; now THAT'S convenient!

Do you know if the shrimp is cleaned and ready to eat?

16. HEB carries that raspberry chipotle dip in their "Good to Go" line
and it's one of my favorites. In fact, I bought their Good to Go cornbread dressing, mashed potatoes, and turkey gravy. I was able to sample the dressing and it was great! Since I don't have any claim to a special recipe, I figured it was as good as anything I could make and it gives me more time to make some other recipes.

I've only been to Central Market a couple of times and frankly, it was so crowded that I haven't had much desire to go back. They have a lot of cool stuff but some of that has trickled into the regular HEB stocks so I don't feel too deprived. (I'm down near Austin, by the way.)

17. There are few, if any, HEB's around the metroplex...
At least, as far as I know. I've seen them all over other parts of Texas, though. I think Kroger, Albertson's and Tom Thumb kind of share a 3-way monopoly (that's probably an oxymoron) around here!

I always forget the name of that raspberry chipotle sauce; it's something German, and I think it's made in Fredricksburg, Texas.

Man, I could just sit and eat that stuff with a spoon! Who needs crackers? LOL

10. My specialty is Peach Custard
Here's the recipe if you want to give it a try. It's awesome!

Take 1 large can of sliced peaches in syrup, drain the syrup into separate bowl and place the peaches in the bottom of a deep dish pie crust.
Sprinkle the peaches with a little bit of cinnamon, a pinch of salt and a teaspoon of flour.
Add 1 cup of sugar, 1 cup of milk(better with half and half), 1 tsp vanilla, 2 small eggs and 2 Tablespoons of flour. Whisk together until eggs are slightly broken but not totally incorporated.

Pour custard mixture over peaches. Add top crust to pie. Bake on a cookie sheet at 450 for ten minutes then turn down to 375 for another 45 minutes.

After pie has cooled sprinkle top with granulated sugar.

:loveya: Serve with a little whipped cream on top! YUM!

12. Apple.
Use a mix of apples, though. Granny Smiths are too dry all by themselves, so I like to use half Gala and half Granny Smiths. The Galas provide some juice and the apples keep their texture after cooking.

Mmm. Pie!

I remember my mom making 3 or 4 pies at Thanksgiving. I wish I had the time. Thanks for all the wonderful suggestions and recipes.
