Got a good or unusual recipe for duck? |

I decided my sister and I should have duck for Thanksgiving. There's just the two of us for Thanksgiving, so we usually have our own little private gourmet party.
Do you have an unusal recipe to share?
Also need ideas for a side dish that would be equal to dressing, of some description.
We have cranberres and yams, so far.

Goes well with citrus.
Get a jar of orange marmalade, and melt it with a bit of orange juice to use as a baste.
You can fill the cavity of the bird with quartered oranges (leave the rind ON)... it gives a citrus fragrance & flavor to the meat of the bird (discard the fruits).

An ordinary bread/celery/onion dressing (cooked in a dish in the oven seperate from the bird) would be good. You could add a few tablespoons of frozen concentrated O.J. to the liquid for a sweet citrus flavor.

Find a good recipe for Japanese soba soup and use shreds of the leftovers in it - including some of the skin and fat.
We do duck in the autumn and that's our leftovers recipe for it.
For dressing - try a wild and brown rice pilaf with very good mushrooms - morels or chanterelles, if you can find them.
Asparagus with a light, lemon sauce goes well with duck.

wild rice goes perfect with duck. I'd bet you could even find a wild rice dressing at foodtv.com
