Everyone knows hot dogs aren't exactly healthy for you, but in a new study chemists find they may contain DNA-mutating compounds that might boost one's risk for cancer.

Scientists note there is an up to 240-fold variation in levels of these chemicals across different brands.

"One could try and find out what the difference in manufacturing techniques are between the brands, and if it's decided these things are a hazard, one could change the manufacturing methods," researcher Sidney Mirvish, a chemist at the University of Nebraska Medical Center in Omaha, told LiveScience.

Mirvish and his colleagues examined hot dogs because past research had linked them with colon cancer. Hot dogs are preserved with sodium nitrite, which can help form chemicals known as N-nitroso compounds, most of which cause cancer in lab animals.

Extracts from hot dogs bought from the supermarket, when mixed with nitrites, resulted in what appeared to be these DNA-mutating compounds. When added to Salmonella bacteria, hot dog extracts treated with nitrites doubled to quadrupled their normal DNA mutation levels. Triggering DNA mutations in the gut might boost the risk for colon cancer, the researchers explained.

The true cause of the heightened cancer risk is the widespread use of a carcinogenic precursor ingredient known as sodium nitrite by food processing companies, says nutritionist Mike Adams, author of the just-published Grocery Warning manual.

Nearly all processed meats are made with sodium nitrite: breakfast sausage, hot dogs, jerkies, bacon, lunch meat, and even meats in canned soup products. Yet this ingredient is a precursor to highly carcinogenic nitrosamines -- potent cancer-causing chemicals that accelerate the formation and growth of cancer cells throughout the body. When consumers eat sodium nitrite in popular meat products, nitrosamines are formed in the body where they promote the growth of various cancers, including colorectal cancer and pancreatic cancer, says Adams.

"Sodium nitrite is a dangerous, cancer-causing ingredient that has no place in the human food supply," he explains. The USDA actually tried to ban sodium nitrite in the 1970's, but was preempted by the meat processing industry, which relies on the ingredient as a color fixer to make foods look more visually appealing. "The meat industry uses sodium nitrite to sell more meat products at the expense of public health," says Adams. "And this new research clearly demonstrates the link between the consumption of processed meats and cancer."

50. I thought that the reason it wasn't banned was because sodium nitrate
was a preservative, not a 'color fixer'! This is bordering on criminal, if it's just for the appearance of the meat! One could argue that it is necessary as an additive because people could ingest spoiled and contaminated meat, resulting in immediate illness and or death, which might seem more worrisome than waiting 20 years for the possible development of colon cancer. But to knowingly add sodium nitrate to just make food more appealing... criminal, no?

20. Most of the nitrates are in the lining
I buy locally made italian sausage, made in the grocery store. They swear they don't use nitrates, but I cut the lining off anyways for cooking it.

Like anything else, processed meat is something that should be eaten in moderation. I don't think the occasional hot dog is going to give anyone cancer, but if you eat a diet based on hot dogs and bolonga, then you will have problems.

i only rarely eat hot dogs, but the rest of the family does. a good kosher dog has a lot less "by-products". i don't know the ins and outs exactly, but i do know that they do not put a lot of that crap in their dogs.
i have a great kosher deli just down the block from me, they smoke their own turkeys and make their own dogs. i shop there a lot. even though i sometimes get the eye, because i am so very goy.

People have to watch out for themselves and stop believing that the FDA is doing it for them. Blame the money loving lobbyists and corporations for nitrites, nitrates, msg, benzoates, milk changing chemicals and the job they did in bribing the FDA - the FDA who approved fancy poison ingredients.

People wonder why we're fat and sick. We are chemical disasters. And we, through our leaders, allowed the poison peddlers to fake health claims through the FDA.

If you ever get a chance try Sabrette hotdogs, they are the best. I used to get them all the time when I lived in NJ but they are not available here in Ohio.

Vitamin c is supposed to stop the formation of the "nasty" chemicals in your system. Why don't they just get the nitrite out? Their sales would improve.

I am not for scare tactics and the misrepresentation of science for the purposes of inducing lifestyle change.

Hot dogs are not very nutritious but they are also not killer nitrate cicles that give you instant cancer.

I can't remember the exact amount of hot dogs consumed in a month that was supposed to increase the risk of leukemia, but I ran across the story recently in some research and the source seemed pretty credible. I'll look for it again. I remember thinking that the amount wasn't even that ridiculously high, either. I have young kids and they have some friends who eat multiple hot dogs every day.

We haven't banned hot dogs entirely in our house, but we do get the nitrite-free version from Trader Joe's, the "Best in Show" ones. They're priced fairly comparably to Oscar Mayer hot dogs, and they taste pretty good. I admit that I haven't been as impressed with some of the other nitrite-free brands or veggie dogs, but the Trader Joe's ones are good for the few times a year when we decide we really want to have a cookout.

I will say that in all the nutrition research I've done in my job, regular hot dogs are one of the absolute WORST foods I've found.

I stopped eating meat because of the cruelty involved, I knew of the health benefits but I am more concerned about animal welfare...

MorningStar makes some tasty alterntives and 8th Continent Soy Mike is GREAT!! Rice Milk is yummy too.

All this talk of hot dogs. Is it OK to eat hot dogs at 4AM? I think I'm going to have to cook up a couple. :-)
