c is a velocity. As such it has dimension of length/time. So c^2 has a dimension of length^2/time^2. Together with mass, which has the dimension of, well, mass one gets the dimension mass*length^2/time^2 for mc^2. Look up the formulae for energy values and you will find that this is precicely equal to the dimensions that energy has. Compare, for instance, to the non-relativistic formula for kinetic energy (1/2)m*v^2 or the product of Force with length. E=mc^3 would be totally off, since c^3 has a dimension of length^3/time^3.
Often "order" does have a deeper explanation that follows strictly from logic. The argument you are making comes dangerously close to invoking the "god of the gaps". It is up for debate whether evolution is directed by other mechanisms than natural selection, but they certainly are not obvious, and if they are there, it probably does not require god to explain them.
