That way they can defend their policy while also doing a noble thing. Of course I already know the answer, its cuz they are greedy SOBs.

About 10 years ago, I was hit by a car while in a crosswalk. Luckily I only had a few broken ribs, but I racked up close to 5 figures in medical bills.
My employer's health insurance paid the bills but once I got a settlement from the car insurance company, I had to turn most of it over to my employer to reimburse them.
That's just how this works -- you can't double-dip on settlements and insurance. I don't know why the woman's attorney didn't realize this and ask for a higher payout from the trucking company...

and she'll never be able to live independently for the rest of her life, I don't think Wally's has a prayer of recovering what the insurance company paid out.
It's not like she got any sort of a bonanza. Four years in a nursing home (which is where she'll go when her family is gone) would wipe it out completely.

Which makes the amount of money really stupidly low. She could live 35 years from the time of the accident. What they got isn't even close and is already largely depleted.
Badly handled all around.
