Corn: it's what's for breakfast, or dinner, or destined for the trash? |

OK, our power 'might' be back. We have two fridges, both room temp now. We freeze fresh corn when it's on sale because we love it and it's hard to find. Now I have about 50 ears of frozen corn that defrosted. Should I toss them, and is there any health risk if I refreeze them?
Thank you for any answers.
I seared fresh asparagus and froze that, too. The trash is calling.

I'd make corn chowder from it and corn relish. You should be able to freeze the chowder and have no prob canning the relish.

I'm not really thinking about cooking, because I have to go shopping to do so. Having said that, those both sound good. Maybe I'll have corn for lunch and see if I perish.
The corn has been defrosted for about two days. I tried to keep the freezers full, but five days w/o power defeated me.

(smell test), I would reheat it and refreeze. Also consider making soups or other prepared meals before freezing.
When I learned that power was likely to be off for a long term, I said to my sister, "I wonder how many freezers are defrosting winter food stocks?" I guess that sounds trivial given lives were in danger, but we freeze and can all summer, and know how valuable those fresh summer veg are during the winter months.
