She quit in order to...run for Governor of Alaska! She couldn't properly devote herself to the campaign while in office.
Her official campaign for Governor has already started! Attack ads against Sean Parnell are running in Anchorage 24/7.

The whole "governing" thing is a distraction from the joy of campaigning. And even better, there is the added benefit of a comeback campaign. And there is a very good chance the GOP media would successfully convince her supporters that she never quit. That the "quitting story" was liberal propaganda.
