All it takes is practice. That machine is a solution without a problem IMO.

I used to work brunch and had to crack about 50 dozen eggs on Sunday mornings, I got REALLY good at it, cracking two eggs at a time, one egg in each hand. A good pace was a dozen in 15 seconds.
