It's remarkably lean, with a pleasingly slight game-y taste. It reminded me of the taste of snake. Okay, I know most folks don't know what snake tastes like. Picture wild salmon mixed with chicken(yes, god damn it, it tastes a little like chicken). I think I'm going to pick some up at Whole Foods tonight.

28. When I was in China a few years back to bring my daughter home

we had to stop in Guangzhou for several days to get the American side of the adoption documentation done. Our guide told us that in Guangzhou province people will eat just about anything and one restaurant close to the hotel proved it. One of the couples who were with our group went to it for dinner because in the window it had tanks with fish and lobsters in them. But when they got into the place there were more things in tanks and cages. Snakes, bugs, alligators. They left without eating when at the next table the patrons ordered alligator, one was brought to the table for approval and then killed right there. The couple in question ate in the very Western style hotel we were staying at for the rest of the trip.
