PASCO, Wash. (AP) - Just super-spud me.

The head of the Washington state Potato Commission says he's sick of people linking spuds to junk food.

So, starting Friday, Chris Voight says he's going to eat nothing for 60 days except potatoes.

Twenty plain potatoes a day. And no cheating with cheese toppings or bacon bits.

Voight says potatoes are rich in potassium, fiber and vitamin C and have plenty of protein.

8. Potatoes are pretty healthy
until you cut them up and put them into a fryer. Or smother them with sour cream, butter, cheese, chili, etc.

11. I don't doubt the health of potatoes
the people of the Andes have lived on the potato almost exclusively for centuries. The problem is, in the US we only use like three kinds of potatoes, which is just asking for trouble, when a fungus hits and all the potatoes are gone, like what happened in Ireland.
