It's a presepe (Nativity) tradition originating in Basque country that has spread elsewhere over the years.

It's an amusing pastime to try to find the caganer in elaborate Nativity scenes, which are centerpieces in many homes (the Christmas tree--if there even is one--is a distant second).

You might be unclear on what is meant by "Nativity Scene." I am not talking about the American ones, which are just a stable, a cow, a sheep, some wise men, and the principals standing around a manger.

I am talking about the European ones, that involve an entire CITY or village and are laid out on a table or a buffet....there are people cooking, yelling out their windows, shopping, hanging laundry, doing all sorts of things, in a lighted city tableaux....and off around a corner, you'll find, if you look, the caganer. He represents everyman, because everyone has to shit. He (or she) is often famous, because even famous people shit.

The Jesus-Mary-Joseph part of the Nativity is just one portion of this large display, and Jesus isn't put in the manger until Xmas eve (usually by the youngest child able to do the task in the home).
