What Does It Really Cost to Run a Restaurant?
Quite a good article on Eater about the costs involved in running a restaurant - on $1,215,037 in sales in 2019, Mei Mei in Boston profited *drumroll* $22,116. Of course, the math is completely different for Conglom-O scale operations, which is why McDonald's can sell Big Macs at more or less the same price everywhere, but that's an apples-to-orchards comparison.
It's good insight into the squeeze that things like minimum wage increases (which I am 100% in favor of), supply disruptions/cost increases, and economic downturns affect the industry; with the way all three of those aspects as well as a lot of other facets of the business are trending, please understand you're probably going to pay more to eat out in the future.
(Am chef, owner and I just had to raise prices to make ends meet, some regulars complained quite loudly. Seriously considering sending that article out on our announcement email list.)
