(7,638 posts)im thinking about making a pot to watch returns this evening. My wife is going to make cornbread.
1 lb ground beef, browned
1 can kidney beans, drained
1 can diced tomatoes
1 can plain tomato sauce
1 pkg onion soup mix
Chili powder to taste (1 use 2 tbsp)
Stir all together and simmer at least an hour. I usually do this in the crock pot, low all day or high 4 hrs.

(58,785 posts)This recipe for Smoky Beef and Bacon Chili became my quick-chili standard after I found it in Sunset Magazine a long time ago now. More ingredients than Freddie's but they're all in my pantry for throwing together a quick pot. The smoked paprika is a must.

(20,741 posts)It's a fudge of a really good pumpkin bread. I change the 3C flour to flax meal, almond and hazelnut flour and some rice flour. I change the 3c sugar to half as much sucralose. I use a cup of olive oil, a large can of pumpkin, 2t baking soda and 1.5 t salt. the usual spices: cinnamon, ginger, nutmeg, little bit of ground cloves. 3 eggs. a 1/2t guar gum adds some glue. But mix that into the dry stuff well, first. Add more rice flour if it's too wet. Bake 350 a long time, like in a loaf, at least an hour. You'll have to break one out and test when it gets really crunchy and dark. I broke some walnuts on top...

1/2 c pumpkin purée
4 T unsalted butter
1 t stevia glycerine or 1/3 c fake granulated sugar
2t vanilla
2t cinnamon
6T coconut flour
1t baking powder
Spray muffin liners with nonstick spray.
Whisk 1st 6 ingredients together, then add flour and baking powder. Bake at 350 for 22-25 minutes. Makes 6

(14,923 posts)one up and add it as well. I have some snacks to graze on, such as smoked salmon spread, pimiento cheese, chevre from a local farm, and local fall apples if the evening is long. I will be drinking diet coke and muscadine cider. If there is a lull in the reporting, I have some beautiful fresh beets with their greens intact and I may make another soup out of them to eat for the rest of the week.
