Just got my turkey breasts in the smoker...

My Thanksgiving tradition is Smoked Turkey Breast! After a 48 hour marinate they go into the Brinkman Smoker-Cooker with a thick coating of Tapatio Hot Sauce and Black Pepper. I have to add Hickory every couple of hours for the 12 hour Smoking and when they are done they are pretty black, pretty moist and plenty HOT! The Brinkman has a water pan that keeps the meat from drying out over the long process and an electric element for the heat. Sometimes I put the birds in the oven to finish them off and if so the juices make some pretty hot gravy! We have owned a smoker now for about 25 years...it's very popular with my relatives! I am making three breasts this year as I am attending three feasts today and tomorrow. Guess who's turkey gets eaten first?

I've never been that great of a cook. My husband, daughter, father, and mother in law all wanted ribs this year so we ordered from a barbeque restaurant. I also got some turkey from the deli at the store for me and my son. My husband makes delicious whipped potatoes and a fantastic cinnamon apple crumb pit. Oh, so much good food. I can't wait.

I visit my Canadian relatives every summer and they smoke EVERYTHING: brisket, ribs, duck, salmon and, of course, turkey! Last time I visited, I learned an important lesson: Load up your plate the first time around because there will be nothing left if you go back for more!

My nephew, his son, and two friends are having a "smoking competition" next summer and I plan on being there!

Happy Thanksgiving!
