So what are we betting? Polonium (probably not; that takes a long time to do the job)? Ricin? Antifreeze? Arsenic? Any suggestions?

It took three weeks for it to kill him. Georgi Markov was assassinated with ricin, injected into his leg by a modified umbrella. Even that took three days to do him in. Maybe succinylcholine chloride - difficult (but as of recently, at least possible) to detect because it's metabolized quickly; the victim seems to be having a heart attack.
