Made the best Brussels sprouts today. I got small ones. I cut off the butt ends

and let outer leaves fall off. Then I sliced each into 3 lengthwise. Toss them with: Salt and pepper. Balsamic vinegar reduction. Olive oil. Just barely enough to cover them when tossed. Then I put a little bit of canola oil in a lasagna pan. Spread it with a paper towel. Spread the sprouts out and put it in a preheated oven at 375 for 18 minutes. I just left it. Did not stir. The sprouts were caramelized each on both sides. Yummy.

We've had "purple" brussels sprouts the past two nights. Wife found them at Trader Joe's.

They taste like normal brussels sprouts, but inside the leaves are a bruised-looking purple.

Substituting those for regular rice to cut down on the carbs.

Haven't tried that with sprouts but it does sound good.

I have done something similar with cauliflower and it's delicious. Lots of recipes out there; if you're interested, just put "roasted cauliflower recipe" in your search engine.

Thanks for posting that idea, I hope to try it soon!.......

Toss everything in the vinaigrette (olive oil, meyer lemons sliced thin after squeezing juice, S&P, some rosemary if you like). The gnocchi are the packaged kind made with potato flour.

Spread on a parchment covered sheet pan and roast at 400 until everything is caramelized. Can add other things. Tiny new potatoes, or cauliflower, or whatever you like.

Delicious meal in one pan. The caramelized lemon slices are my favorite part.

You might like to try this sometime....

About 5 minutes before they’re done roasting, remove them from the oven and toss them with a small amount of maple syrup combined with finely-chopped walnuts. Put the coated sprouts back in the oven for around 5 minutes.

I use my big cast iron skillet for roasting veggies and it does a great job of caramelizing them. Almost any veggie tastes good prepared that way.
