(26,320 posts)I started with a weed puller, to loosen the dirt all around it, but it was so large, I was afraid to pull too hard. Finally I had to resort to a big old garden fork.

(26,320 posts)I don't trim off the scapes or any of the stalk because, in the curing process, lots of nutrition is absorbed by the garlic bulbs. I let it cure for, at a minimum, 3 weeks.
I keep most of what I find, even if it is really small. The smaller heads I use, whole and smashed, when I roast a chicken and then use more when I make broth. I also peel the individual, raw cloves and use them like garlic capsules - just bruise them and then swallow them whole.

(3,290 posts)from a little country store that makes their own in Wisconsin. I am now addicted and am trying pickling my own. Throw in a dried chile arbol and it is dynamite. Not for the faint of heart!
