1 cup flour
1 Tbsp baking powder
1 Tbsp sugar
1 tsp baking soda

1 egg
1 cup buttermilk (if you don't have this, mix milk and sour cream)
1/2 stick of butter, melted

Sift (or, let's be honest, just stir) the dry ingredients together.

Stir in the buttermilk until there are no clumps, then stir in the egg, then stir in the melted butter.

If you want any add-ins (chocolate chips, berries, apples, mac & cheese, whatever) stir them in now.

Heat a nonstick skillet (no need to put butter or cooking spray on it) over medium-high heat and wait until it is actually hot. Use a ladle to pour about 1/4 cup of batter per pancake. Flip when the bubbles in the very center of the pancake pop and leave a "tunnel" that doesn't collapse. Cook the other side until the pancake slides easily on the skillet. Stack on a plate and serve with butter and syrup.

aren't they sort of swimming in syrup? I never have a moat of syrup around my pancakes.

The pancakes look delicious though.

But, I'd overlook it in these trying times. I hope it's not syrup, but bourbon.
